ETÉREO and Chef Paul Barbosa present SAPO, an intimate dining series set on the land, between the mountains and the arroyo, deep in the desert of Baja California Sur.
SAPO brings guests together around a shared table shaped by fire, fermentation, and the ingredients of this region. Each dinner reflects what the land offers in that moment, with sourcing rooted in Baja California Sur whenever possible. Fire carries the evening, and the courses unfold one by one under open sky.
